Revs are controlled by the carbs, fuel and air if the vent pipe is blocked the fuel will initially be supplied and normal operation will occur, but as the tank vacuum increases the engine will begin to die. The rotary valve is found on the 582 mod 90/99
The 582 doesn't get it's oil via premix with fuel, it is held in a small bottle on the top of the motor and is fed into the side of the crank case via the rotary valve.

When the 503 stops, both air intakes are always closed and there is no free air movement to the crank. On a 582 the rotary valve system will always leave one of the two chambers open and thus expose the crank to moisture.

The only reason you would do this is to prevent corrosion on the crank if left to stand for long periods. The 503 motor unlike the 582, has almost zero possibility that the crank could corrode. I wouldn't even bother.

This might sound really wierd but... It is winter, and your battery could be on it's way out. normally EGT probes fail or the wire fails.
swap the wires of the two probes on the skydat and see if the problem moves. If so then it is the probe or wire. If not it is the gauge. Typically it is the wire that breaks due to vibration
